Banana pulp

Banana Puree is obtained from select, Cavendish variety banana ripened under controlled conditions.

The preparation process includes peeling, mashing the ripe fruit, deseeding, deaerating, concentrating under vacuum ( for concentates) and homogenising. In case of aseptic packing the puree is sterilised and packed in presterilised bags. For freezing, the puree is filledin trays and deep frozen in plate freezer at -40 degree centigrade. The puree is also canned in A-10 size cans hermetically sealed and retorted. No additives except vitamin C is added, so the natural flavours are retained.

Usage
Banana Puree/Concentrate is used in the preparation of baby foods, ice-creams yoghurt and confectionery.

The product is also used in combination with other fruit pulp for the constitution of drinks, nectar, juices and various other kinds of beverages.

Microbiological status
Banana puree/concentrate is free from any pathogenic organisms, Aseptic and canned banana puree and concentrate are commercially sterile.
Packaging
Aseptic banana puree/concentrate is packed aseptically in presterilised bags of 55 gallon capacity in open top steel drums. Aseptic packing of 20 kg bag in 5 or 7 ply cartons can also be provided with prior agreement.
Canned product is packed in A-10 size can and hermetically sealed and retorted. Six cans are packed in 5 or 7 ply cartons provided with separators.
Frozen pulp is packed in food grade polythene bags of 5 kg. Four bags are packed in staple-less self locking cartons and shrink wrapped.

Storage Recommendations
Aseptic and canned banana puree/concentrate should be stored at temperature less than 10 degree Centigrade. Higher temperature and sunlight should be avoided to enhance shelf life.
Frozen product should always be stored at temperature less than -20 degree Centigrade.
